Our third release Mataro made in this style. This is a single varietal, medium bodied red, that displays a richness and full palette, without losing its approachability.
Sourced from Heathcote, we picked the fruit early to keep the alcohol at 13%. The extraction of color, phenolics and tannin was very light, and the fermenting must was taken off skins after 10 days. We pressed it using a basket press into tank, before racking into barrels.
We aged it in seasoned French oak barrels for 8 months, without racking the wine off its lees during that time. This helps give it a reductive (meaty) character balancing the beautiful red fruits.
