Barrel fermented saison / aged on white nectarines from Rayners Orchard / Woori Yallock, VIC
Nectarines underwent spontaneous fermentation for a week – 50% were cut in half to help initiate this process @ 325g/L.
We racked 4 month old barrel fermented saison on top and let these condition for 8 weeks.
Packaged on Mar 03 21 and bottle conditioned for 13 weeks.
Pienapple, nectarine, tangelo skin & a dusty brett presence on the nose.
Huge stonefruit vibes in the flavour. A subtle acidity and texture that reminds us of consuming a fresh nectarine in the sun.
Super refreshing while complex if desired.
