Our latest Site Fermentation Projest release is a thirst-quenching Brett Saison.
For this beer, we used 100% Voyager malt from NSW, 60% raw wheat and 40% schooner malt, with aged NZ hop flowers used in the boil. It was fermented and aged in stainless steel using a combination of yeast strains: The Mad Fermentationist Saison Blend and Funk Weapon #2 from Bootleg Biology.
It presents a brett quality on the nose, along with tropical lemon, lime and elderflower aromas. On the palate you’ll get a balanced funky acidity, it’s a refreshing treat.
